Asparagus & Avocado Scrambled Eggs

Breakfast this morning was a heart healthy protein booster: Asparagus and Avocado Scrambled Eggs. This recipe will serve 2 people and take about 15 minutes to prepare. Here’s what you need:

  • 3 Eggs
  • 1 Tablespoon of water or rice milk
  • A pinch of sea salt
  • 2 Asparagus stalks
  • 1 Fresh Lemon
  • 1 Avocado (ripened)
  • 1 Tablespoon Extra Virgin Olive Oil
  • A dash of Black Pepper


Here’s how you do it:

1.) Chop up the asparagus and squeeze a bit of lemon juice over the stalks. Microwave for about 2-3 minutes (this can vary depending on your appliance) or until tender.

2.) Peel and remove the stone of 1 avocado and slice up one half.

3.) Whisk the eggs and sea salt with the water or rice milk in a bowl medium size bowl.

4.) Heat the olive oil in a sauté pan over medium heat, then add the egg mixture.

5.) As the egg mixture starts to get firm, gently stir with a spatula to create texture.

6.) Once the eggs are firm, add the asparagus and avocado, folding it in to the eggs with the spatula.

7.) Turn off the heat and season with black pepper to taste.

Cruising into week five and I’m feeling GREAT! My strength is up, my meals are flowing and most importantly so is my cardio.

Today me and Marcus Taylor busted some chest and we both pushed some heavy weight. The Black Line Pre Work Out has most definetly got me focused and ready for war in the weight room. It’s been years since I’ve felt this strong but I kid you not – y’all are going to be impressed in about 4-5 weeks. Its always about learning and improving – and I feel that’s just what I’m doing.

Overcoming The Dreaded Weight Loss Plateau

It’s not uncommon to hit the dreaded plateau during the weight loss process. However many people can find it discouraging. What’s important is to identify the underlying cause. This can vary depending on gender, age and individual health issues so it’s wise to consult a professional who can make an accurate diagnosis. Once the cause has been established, you can form a workable strategy.

I’m in the process of completing a fitness project with Jamie Sallmén. She recently hit a weight loss plateau. The reasons why this happened are uniquely feminine and she wrote an interesting blog about her experience. Check it out here.

I’ve been doing cardio everyday & eating healthy. The only exception being last Thursday when I had some ice cream and candy with my daughter. I’ve most definitely got things crackin’ in the weight room.

The supplements are great. I love the fact that I can simply drink them. The pre-work out definetly gets me focused and ready to bang things out when I do my lifting. I feel really strong and full. I’m cutting down again. I know my body and see awesome results on the horizon. Stay tuned!
