Asparagus & Avocado Scrambled Eggs

Breakfast this morning was a heart healthy protein booster: Asparagus and Avocado Scrambled Eggs. This recipe will serve 2 people and take about 15 minutes to prepare. Here’s what you need:

  • 3 Eggs
  • 1 Tablespoon of water or rice milk
  • A pinch of sea salt
  • 2 Asparagus stalks
  • 1 Fresh Lemon
  • 1 Avocado (ripened)
  • 1 Tablespoon Extra Virgin Olive Oil
  • A dash of Black Pepper


Here’s how you do it:

1.) Chop up the asparagus and squeeze a bit of lemon juice over the stalks. Microwave for about 2-3 minutes (this can vary depending on your appliance) or until tender.

2.) Peel and remove the stone of 1 avocado and slice up one half.

3.) Whisk the eggs and sea salt with the water or rice milk in a bowl medium size bowl.

4.) Heat the olive oil in a sauté pan over medium heat, then add the egg mixture.

5.) As the egg mixture starts to get firm, gently stir with a spatula to create texture.

6.) Once the eggs are firm, add the asparagus and avocado, folding it in to the eggs with the spatula.

7.) Turn off the heat and season with black pepper to taste.
